Preheat the oven to 350°F (180°C) and have an 8”x 8” (20 cm x 20 cm) glass baking dish ready.

In a medium bowl, mix the flour, coconut, cinnamon, allspice, cloves, dates and vanilla together.

Halve the apples and cut away the stems. Trim a little off of each “bottom” to create a level surface so that the apples don’t roll around in the dish. Use a spoon to scoop out the cores, and then arrange the apples in the baking dish.

Add the oil to the streusel mix and use a pastry cutter to cut the mix into coarse crumbs. Fill the apple halves with the streusel and pour the cider into the bottom of the baking dish.

Tightly cover the baking dish with foil or a heat-safe lid. Bake for 20 minutes, and then uncover and continue to bake for another 15 minutes, or until the apples have reached the desired tenderness. Serve the apples warm with a dollop of mascarpone.

Leftover apples can be refrigerated for 5 days.
